Miller’s rice – specialty of Mantua: a risotto but much less starchy/creamy (owing to the different variety of rice, Vallione Nano), with a garlicky mix of pork loin, guanciale, and pancetta.

Somewhat mature purple sprouting broccoli mixed with a dressing of crushed garlic, anchovies (salted, not the nasty oil variety), capers (salted not brined), red wine vinegar, EVOO, lemon juice.

Wine – a magnificent “white” from Dario Princic, in Friuli Venezia Giulia. Pinot Grigio, Chardonnay , Sauvignon Blanc, subjected to carbonic maceration. Flavour is somewhat between peach, rotten apples, and apricots, but its the cloudy rustiness & the tannins which are most notable. Drinks somewhat better on its own, than with this particular food.
